Some girls collect shoes. I collect recipes. And some of my very favorite are enchilada recipes. You can never have too many good enchilada recipes. I think I might be able to eat enchiladas every day of the week. I think I only have 4 very favorites right now. No, wait. Make that 5!
Tonight I decided to splurge and make one from a recipe I found last furlough. It's a little bit of work, so I haven't made it yet since being in PNG. But tonight was the night.
I made things simpler by buying a Kai Bar rotisserie chicken and shredding it. (Hey, considering a whole, raw chicken costs US $15, and a whole cooked rotisserie chicken costs only $14, it's the way to go!) (btw... I almost never, ever ever buy a whole chicken. I can't remember the last time I did, but I figure, since it was our anniversary this week I can splurge a little to make a nice meal for my favorite guy!)
You can find the recipe here: Angela's Awesome Enchiladas
Here is the onion, chicken, green chilies, taco seasoning and water all mixed together. There were supposed to be some green onions too, but I forgot to buy them at market this morning. I threw in some black beans too to bulk it up a little more. These simmered for a while then I added lemon juice (didn't have lime) and the garlic and onion powders and let it simmer a little longer.
Then I mixed up a sauce of cream of chicken soup, sour cream and chili powder. I had to make my own soup, since it's not available at the store right now, but if you have the stuff in a can, it's a lot quicker. I also had to make the sour cream (but that's easy peasy).
Some of the soup/sour cream went in with the chicken, and the rest goes on the bottom of the 9x13 pan.
Then the chicken mixture and some cheese goes into each tortilla and you roll it up and plop it in the pan.
My enchiladas ended up all different thicknesses, but I was trying to go really fast as I was dealing with a baby who was alternately pulling himself up by my skirt (and thus pulling said skirt right off me), crawling outside and eating mouthfuls of dirt, or just screaming hysterically because I wasn't holding him. Sigh. I usually love cooking, but moments like these just get stressful!
Then the enchilada sauce is poured on top making a lovely layered dish, and cheese is sprinkled on top. (There was supposed to be a full 1 1/2 cups of cheese on top, but since cheese here is almost as painfully expensive as meat, I put a lot less on.)
Then into the oven they went for about a half hour and viola! Dinner was served.
